This Easy Strawberry Cake is so simple and so easy and yet tastes amazing. It just needed a dusting of powdered sugar and it was good to go. Don’t you guys love the ease of making such cakes?

The berry season is here and market is full of all sorts of berries. I always end up buying way more berries than I could possible consume. And also berries get spoiled pretty quickly. I try to keep them dry and do take all sorts of precautions but before you know it they are too ripe, almost rotten.

So if you are looking for a simple and easy strawberry cake recipe or simple looking for a way to use strawberries in your refrigerator – make this cake! I am pretty sure that you won’t regret it!

Ingredients of Eggless Strawberry Cake

1 1/2 Cup All Purpose Flour Or Maida

1/2 teaspoon Baking Powder

1/4 teaspoon Baking Soda

3/4 cup Fresh Pureed Strawberry

1 cup sugar

1/2 cup Vegetable or Canola Oil

1/3 cup Hung Curd

1/2 cup sprite

How to make Eggless Strawberry Cake Recipe

1.Take a large bowl and add Maida, Baking Powder, Baking Soda all together and mix the with a hand mixture.

2.Now in an another large bowl at first add Pureed Strawberry and sugar together and mix them with an hand mixture very well. Add oil and mix again. Do not beat the ingredients, just mix them in a clock wise circular direction.

3.Add the hung curd and again mix them till all the ingredients completely dissolve. Now add the Flour mixture to the Strawberry puree mixture and cut and fold them together.

4.Add the Sprite and very slowly mix with the other ingredients, because the bubbles which formed in the mixture, they will be disappeared.

5.Pre-heat the oven to 375F.

6.Grease a cake pan with some oil, dust some flour into it. Pour the batter into the pan and put the pan inside the preheated oven for 25-30 minutes.

7.After 30 minutes remove the pan and check if the cake is ready or not by inserting a clean knife. If the knife comes clear, your cake is ready. If does not, then put the cake inside the oven for another 3-5 minutes.

8.Remove the cake from the pan and let it cool down.

9.Decorate with whipped cream and strawberries of your own choice.

10.Slice the cake and serve when it is completely cool down…..Enjoy with tea or coffee.

Cake can be stored at room temperature for up to 2 days, loosely covered, but good luck with that.
